A mid-career accident forced popular French chef Jacques Pépin to leave the top-tier kitchens where he had earned his name. But a new challenge beckoned: launching a television franchise.

That was over 30 years ago. As Pépin prepares to air his final television series, he reflects on his humble start in front of the cameras. And it all started in an unlikely place: Jacksonville, Fla.
